Kitchen SURPRISE!

While Meg was home in New Jersey, I was back in Worcester, cooking for one.  I turned to my favorite cooking adventure: kitchen surprise!  It’s easy: (1) investigate your fridge, cabinets, etc; (2) select some items; (3) combine them into something delicious.  One of these days I’ll add a fourth step of writing it down, although part of the excitement is that it’s totally unplanned and unpredictable.

Tonight’s theme: keeping it GREEN.  Yes, we love eco-friendly things, but that’s not what I mean.  I mean GREEN.  It started with green pasta (it’s made with zucchini and spinach or something) in the cabinet.  In the freezer, I found frozen broccoli, frozen edamame, and some of Meg’s homemade pesto that we froze.  SO MUCH GREEN.

Pasta + Broccoli + Edamame + Homemade Pesto = SURPRISE!

The finished product was better than I imagined.  And it was SO EASY:

Step 1a: Cook the pasta.

Step 1b: Cook the broccoli in a lightly oiled pan over medium heat, covered.  (Or steam it.  Meg loves that.  NOT.)

Step 1c: Cover the edamame with water, bring to a boil, then simmer (covered) for 5 minutes.

Step 2: Drain the pasta and edamame.

Step 3: Combine the ingredients and add the pesto.

What’s that?  I didn’t include any amounts or times?  Yeah.  Go with it.  Make it up.  That’s what kitchen surprise is all about.
