Happy Halloween, everyone!
Last night Heather and I decorated Halloween cookies that we baked during Hurricane Sandy. We were out of eggs and not about to venture to the store, so we replaced the egg in the recipe with 1/4 cup of applesauce (not homemade – the remnants of our last batch of store bought). Turns out, you really can’t tell the difference! Of course, the two sticks of butter prevent this from being anywhere close to vegan, but we never pretended to be vegan bakers!
